A few weeks ago I saw some of @hideyoshimoto's pictures on Twitter. He was at Doraku South Beach and doing some pretty interesting things with his dishes. I soon found out that he actually works out of @dorakusushi here in Honolulu. Hearing that I was here in Hawaii he told me to stop by and pay him a visit. Who am I to say no? So I asked @sakeshop's Malcom and Nadine along with a couple of their friends to join me for a food adventure.
What got all this started was @hideyoshimoto's lobster sashimi in South Beach. Unfortunately do to the logistics we couldn't get the lobster. Instead we had omakase. If you don't know what omakase is it basically means, "up to you" at a sushi restaurant. Usually you're entrusting yourself with the sushi chef to create innovative and surprising dishes.
Let me just say that @hideyoshimoto did not disappoint!
To start we had some cucumber with uni! What a way to start off! This stuff was addicting.
From there we had the ahi tataki, fresh and tantalizing!
Seared citrus plum Hokkaido scallops was next. The scallops were tender, there was a citrus taste, but a little tartness from the drop of ume on the scallops, followed by a little heat at the end from the shichimi.
Onaga sashimi over chiso leaf. This was my favorite. You start off with a lot sweet flavors and end with a kick of hot spice at the end.
Sashimi sampler. Can you say fresh and fatty? That speaks for itself.
It was so fresh it was worth another picture.
Deconstructed rainbow roll. This was an onaga and hamachi wrapped around some interesting green stuff. Alongside was a cucumber roll with maguro. The cucumber roll was creamy while the onaga and hamachi were sweet. Everything in this dish had a lot of different textures going on.
Ama ebi with uni and ikura. No soy sauce please. This was a purist dish. The ama ebi was sweet and fresh, but what amazed me was that you could taste the ama ebi, uni, and ikura separately, but the flavors complemented so well. I know that sounds weird but trust me.
Finally, there was the salmon with a ponzu based sauce. I can't eat salmon but I tried a little. If I could eat salmon, this and a bowl of rice would be heaven.
Oh and there was a sake find there too! @dorakusushi has a pretty good sake selection, a lot of stuff from World Sake. One of the sake at @dorakusushi, caught @sakeshop's taste buds, Akitabare Suirakuten. Keep an eye out to see if it shows up @sakeshop.
The food was a journey for our palates, the sake selection covered the spectrum, and of course in the company of great friends it made for a, "Cool like dat!" evening!
